1 onion, sliced
1 knob of ginger, sliced
50 grams butter
2 large sweet potatoes, peeled and diced into even chunks
250 mL water
50 grams Ocean Spray® Craisins® Dried Cranberries
8 lamb cutlets
Sauté onion and ginger in a fry pan with 10g of butter. Add the sweet potato with the water and stir gently. The idea is to have the potatoes soft by the time the water is absorbed. Add additional water if necessary.
Drain potatoes, if necessary, place in blender with remaining butter and blend until smooth.
Place in small mixing bowl add Ocean Spray® Craisins® Dried Cranberries and season to taste.
Grill lamb chops to medium and serve with mash.
Lamb may be replaced with chicken fillets, pork, fish or steak
