Cranberry Banana Bread

Makes 1 loaf


225 grams caster sugar
100 grams butter or margarine, softened 3 ripe bananas, peeled and cut into 1-2 cm chunks
4 tablespoons milk
2 eggs
300 grams plain flour
2 teaspoons baking powder
50 grams chopped walnuts
150 grams Ocean Spray® Craisins® Dried Cranberries


Preheat the oven to 180°C. Grease and line a 1kg loaf tin.

Mix the sugar and butter together in a medium mixing bowl until completely blended. Add the banana, milk and eggs, mixing well then add the dry ingredients and mix until just moist.

Stir in the walnuts and Craisins® Dried Cranberries and pour the mix evenly into the prepared loaf tin.

Bake for 1 hour or until a toothpick inserted into the centre of the loaf comes out clean. Turn the loaf out of the tin and leave to cool on a wire rack.
