170 grams Ocean Spray® Craisins® Dried Cranberries
1/2 cup Cointreau liqueur, plus 2 extra tablespoons
2 sheets frozen short crust pastry (25cm x 25cm)
2 tablespoons butter, melted
3 tablespoons sugar
250 grams mascarpone cheese
Mint leaves to garnish.
Preheat oven to 220°C.
In a microwave safe bowl combine Craisins® Dried Cranberries and 1/2 cup of Cointreau. Microwave for 1 minute on high and let cool. Meanwhile, cut pastry sheets into 8 - 10cm stars and place on a non-stick lightly greased baking tray. Brush with melted butter and sprinkle each with sugar. Bake for 7-10 minutes, or until stars are golden brown. Remove from tray and let cool. Continue until all stars are baked. Combine mascarpone with 2 tablespoons of Cointreau and dollop a heaped teaspoon on each star leaving a well in the centre. Place a tablespoon of soaked Ocean Spray® Craisins® Dried Cranberries on each star and sprinkle with mint leaves.
