275 grams plain flour 75 grams brown sugar
50 grams caster sugar
2 teaspoons baking powder
1 teaspoon salt, optional
150 mL milk
150 mL vegetable oil
1 egg 170 gram bag of Ocean Spray® Craisins® Dried Cranberries
Sugar for sprinkling
Preheat oven to 200°C. Grease or line a 12-case muffin tin.
Combine flour, sugars, baking powder and salt in a medium mixing bowl.
In a separate mixing bowl combine milk, oil and egg. Add the liquid ingredients to the dry ingredients, stirring just until dry ingredients are moist. Stir in the Ocean Spray® Craisins® Dried Cranberries.
Fill each muffin case 3/4 of the way full with mixture. Sprinkle the top of each muffin with sugar.
Bake for 18 to 20 minutes or until golden brown. Leave to cool for 5 minutes in muffin tin then remove the muffins from the tin and cool on a wire.
