Witlof, Apple & Walnut Salad with Cranberry Vinaigrette

Vinaigrette ingredients:
170 grams Ocean Spray® Craisins® Dried Cranberries
2 cups white wine vinegar
1–1/2 cups castor sugar
1 teaspoon sugar
1 teaspoon French mustard
100 mL olive oil
25 mL walnut oil (or olive oil)
1/4 cup cranberry vinegar

Salad ingredients:
3 Witlof salad greens, leaves separated
1 Apple, peeled, cored and thinly sliced
1/2 cup walnuts, roughly chopped
Salt and pepper to taste


To make vinaigrette: Soak Ocean Spray® Craisins® Dried Cranberries in vinegar overnight. Place in blender, blend thoroughly and strain into a cup.

Combine cranberry mixture and sugar in a saucepan. Gently simmer until sugar has dissolved. Set aside to cool.

Combine cooled cranberry mixture with remaining vinaigrette ingredients, whisking until mixture is thoroughly combined.

In a salad bowl, add Witlof, apple, walnuts, dress with cranberry vinaigrette and season with salt and pepper.
